The Perfect Dal Makhani Slow and Low
A recipe for restaurant-style dal makhani that requires patience, whole spices, and 6 hours of slow cooking.
The Secret
There is no shortcut. Real dal makhani needs time. The lentils break down, the flavors meld, the butter emulsifies into silk. 6 hours minimum.
Ingredients
- 1 cup whole black urad dal (soaked overnight)
- 2 tbsp rajma (kidney beans, soaked)
- 3 tbsp butter + 2 tbsp cream
- 2 onions (fine paste)
- 4 tomatoes (pureed)
- Ginger-garlic paste
- Whole spices: bay leaf, cinnamon, cardamom, cloves
- Kashmiri red chili powder, garam masala
Method
- Pressure cook dal + rajma until soft (5-6 whistles)
- In a heavy pan, temper whole spices in butter
- Cook onion paste until deep golden (20 min, don’t rush)
- Add ginger-garlic, cook 2 min
- Add tomato puree, cook until oil separates
- Add cooked dal, 2 cups water
- Simmer on lowest flame for 4-6 hours, stirring every 30 min
- Finish with butter and cream
The Test
When you can’t distinguish individual lentils anymore when it’s a creamy, dark, unified mass it’s ready.
